Planet Plumbing has delivered a world-class plumbing installation at new Sydney Fish Market

 

The new Sydney Fish Market at Blackwattle Bay has officially opened, marking the completion of one of Australia’s most significant hospitality and infrastructure projects. As the largest fish market in the Southern Hemisphere, this $836m development sets a new benchmark for design, sustainability, and operational performance. Likened to the Opera House, this building is truly ahead of its time, a pure masterpiece and a jewel in the crown for the state of New South Wales.

 

 

 

Planet Plumbing is proud to have delivered the plumbing works for this landmark project, supporting a facility that operates at an exceptional scale and requires highly specialised services to meet demanding food-handling, hydraulic, and environmental standards.

 

Key highlights include:

  • Prefabricated seawater dewatering system that operated fault free within the cofferdam for 15 months during the hydrostatic structure phase
  • Hydrostatic basement cast-in drainage network with trade waste holding wells and sewer tanks all below sea level
  • Water services to hydraulic & mechanical infrastructure, including cooling systems and ice making facilities that generate 51 tonnes of ice per day
  • 75kL trade waste & 30kL grease waste pre-treatment DAF systems (dissolved air flotation)
  • Waste water treatment plant generating reuse water for toilet flushing, washdown, cooling towers and irrigation
  • Specialist pressure wash down system throughout operation areas (wholesale, auction hall, loading dock)
  • 200kL, 125kL, 100kL storage tanks (potable, reuse, rainwater)
  • 27 pump stations (sewer, lift, trade waste, grease waste)
  • 4 booster pumps systems (potable, reuse, rainwater, washdown) 
  • Centralised hot water plant
  • Siphonic drainage system collecting rainwater from the 594 glulam timber beam & 407 cassette roof structure, the largest of its type in the Southern Hemisphere

 

On site, our senior site manager Robert Ipscwitz, led the day-to-day delivery of the works, ensuring quality, safety, and coordination across all stages of construction assisted by Tom Tastis, Bilal Barbour & Martin Campbell. Jason BrownPlanet’s Project Manager, provided strategic oversight and project control, guiding the team through the complexity of a live, large-scale build environment. The design and development were driven by Robert Metcalfe, whose vision and technical expertise were instrumental in delivering a robust, efficient, and future-ready plumbing solution. A combined 100 years of experience on this project alone. A special thank you to Harris Page & Associates, Syfon Systems, Aerofloat, Aquacell, Tank Vision, Aline, Nilfisk and Rheem.

The project demanded close collaboration with Multiplex, consultants, and other trades to integrate complex plumbing systems throughout the market, hospitality areas, back-of-house operations, and loading and service zones. Precision planning and execution were essential to ensure reliability, hygiene, and long-term performance across the facility.

 

 

On the 14th December 2025 Planet Plumbing celebrated 30 years and it was great to achieve practical completion at the nSFM in the same year !
